Baking is one of my hobbies and it gives lots of happiness when I bake something which me and my family enjoy the most. Coconut cookies are one among them.
It is so nostalgic as it reminds me of my childhood when we used to get it in nearby bakeries and gets to eat it often as a special cookie. If you like coconut, then you must try this recipe. It is full of coconut flavors and very easy and simple to make.
You can enjoy it with a warm cup of coffee or tea. It's also kids favourite so can be shared in lunch box or as a light snack.
I am sharing the Egg less version with mild sweetness perfect for 15-17 cookies. The sweetness can be adjusted by adding extra sugar to it.
1 Cup all purpose flour
1/2 Cup desiccated coconut
5 tbsp ghee
3 - 4 tbsp milk
5 tbsp powdered sugar
2 tbsp granulated sugar
1 tsp baking powder
1 tsp salt
2-3 drops of Vanilla essence
Line the baking tray with Baking paper.
Preheat the oven at 180C.
Add ghee, sugar, salt and vanilla essence to the stand mixer and mix well until soft peak.
Add desiccated coconut and baking powder to it. Mix well.
Add flour and milk to make a soft dough.
The quantity of milk varies to make a dough. Add accordingly.
Make small balls and slightly flatten them.
Brush milk on top.
Sprinkle desiccated coconut and granulated sugar on it.
Bake in Preheated oven at 180 C for 15 mins
Remove them from oven and let it stand to cool it.
Enjoy your cookies.
These cookies will be great for a week in a sealed container.
Ghee can be replaced with unsalted/salted butter.
If salted butter is been used then salt should not be used in the recipe.
